This is an updated version of my Vegan Banana Bread recipe featured on this blog. It includes more canola oil, a flax egg and chocolate chips. Refer to the post for a flax egg to learn how to make an egg without a chicken.
Banana Chocolate Chip Muffins-Updated
3 ripe bananas, over ripe bananas make great banana bread
1 flax egg
1/3 cup vegetable oil
1 tsp vanilla
1 cup sugar
2 cups flour or flour mixture
1 tsp guar gum or xanthum gum
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
3/4 cup Enjoy Life chocolate chips
- Preheat oven to 350 degrees
- Mash bananas, add flax egg, oil, vanilla, and sugar and mix well.
- Sift flour with salt, baking soda, cinnamon, and nutmeg. Add to banana mixture and mix until blended, add chocolate chips.
- Place batter in a greased and floured loaf pan or muffin tins.
- Loaf: Bake for 50-60 minutes or until toothpick comes out clean.
- Muffins: Bake for 20-25 minutes or until toothpick comes out clean.
